Lap Band Recipe of the Week
Easy Pumpkin Pudding

A great substitute for pumpkin pie this holiday season!

Ingredients:

  • 1 cup canned pumpkin
  • 1 package (4-serving size) sugar-free, instant vanilla pudding mix
  • 1 teaspoon pumpkin pie spice
  • 1 1/4 cups skim milk

Instructions:

  1. Mix all ingredients together.
  2. Place in individual bowls or glasses and chill until set.
  3. Serve cold with nonfat whipped cream on top (optional).

Serving size = 2/3 cup. Makes 4 servings.

Per serving: 77 calories, 0 grams fat, 15 grams carbohydrate, 4 grams protein, 2 grams fiber.
